These marinated olives make a superb addition to an antipasto platter.

The ingredient of Marinated olives

  1. 320g (2 cups) Kalamata olives, drained
  2. 1 orange
  3. 3 garlic cloves
  4. 6 fresh rosemary sprigs
  5. 2 large fresh red chillies, split lengthways
  6. 2 bay leaves
  7. 310mls (1/4 cups) virgin olive oil

The instruction how to make Marinated olives

  1. Place olives in a bowl. Peel rind from the orange using a vegetable peeler. Remove the white pith from rind and cut the rind into very thin strips (alternatively, use a zester). Press the flat of a knife onto the garlic cloves to lightly bruise them. Add the orange rind, garlic, rosemary, chillies, bay leaves and olive oil to the olives and toss well to combine. Transfer the olive mixture to a sterilised, airtight jar, ensuring the olives are covered by the oil, and seal. Stand overnight at least before using to allow flavours to develop.
